This sake is made using the traditional "kimoto" brewing method, which utilizes the power of beneficial microorganisms. Its distinctive features include an instant acidity, followed by a rich, sweet, spicy, and bitter taste, and a crisp finish. This "hiyaoroshi" sake was pressed in the spring of 2025, pasteurized, and stored for a moderate aging period over the summer, making it perfect for drinking.
Recommended temperature: Once you take it out of the refrigerator and let it warm up a little, the flavor will come out.
