Heat treatment in the spring and aging in large tanks mellows the flavor and makes it more mellow. The rich umami flavor evokes the arrival of autumn. The refreshing aromas are reminiscent of green apples, white peaches, and muscat grapes. There's also a hint of milkiness reminiscent of shiratama dumplings and daifuku, but the overall impression is mellow. It pairs well with seasonal flavors like fatty pacific saury, bonito, and matsutake mushrooms in earthenware pots, as well as spicy dishes and dishes with strong flavors like deep-fried chicken. Drinking it chilled brings out its acidity, while serving it at room temperature or warm to about 40°C brings out smoky nuances and enhances the umami, creating a synergistic pairing with food. The label has also been updated for the 2024 Vintage.
