The aroma is gentle and mellow, with a calm aroma reminiscent of ripe apples. The initial taste is moist and smooth, and from the middle onwards, the umami is felt, and the acidity, rounded by aging, adds depth to the flavor. It pairs well with seasonal delicacies such as seared bonito with ponzu sauce, grilled autumn salmon, grilled saury, and matsutake mushroom soup, as well as spicy dishes and strongly flavored dishes such as fried chicken.
