This freshly pressed Junmai sake is made entirely from contracted Tamae rice grown in Wakayama Prefecture. Fermented vigorously with No. 9 yeast, it's bottled raw and delivered fresh. This sake has a hazy wintery, full-bodied taste with a hint of oak.
Every year, it is characterized by a fragrance reminiscent of green apples and lychees and fresh acidity, with the sharp umami and crispness that are characteristic of Tamae. The regular unpasteurized sake has a clear finish, while the origarami sake has a more fragrant, full-bodied taste that is characteristic of new sake. It is a sake that is fun to watch develop in the early spring.
