This freshly pressed Junmai sake is made entirely from contracted Tamae rice grown in Wakayama Prefecture, Kurumazaka's first new sake. Fermented vigorously with No. 9 yeast, it is bottled raw and delivered fresh. This freshly pressed sake boasts a clear rice flavor and a crisp finish.
Every year, it has a characteristic aroma reminiscent of green apples and lychees, a fresh acidity, and the sharp umami and crispness that are characteristic of Tamae. The regular unpasteurized sake has a clear finish, while the origami sake has a more voluminous aroma and flavor that is characteristic of new sake. It is a sake that is fun to watch as the flavor develops towards the beginning of spring.
