〇The concept of special junmai sake
The aim was to create a sake that can be enjoyed from the first sip and that pairs well with a meal. The koji used is closer to ginjo sake, and although it is a slightly thinner type of sake among Kurumazaka sakes, the moderate acidity gives it a strong core and a crisp finish. The stained-glass style label is designed with a wind and wave motif. If you look closely, you can see a fish hiding inside.
〇This year's flavor
The top note is gentle, with a refreshing aroma reminiscent of spearmint. When you put it in your mouth, the sweet aroma of pear, banana, and yellow peach gently rises from the depths. The taste is fresh, with just the right amount of sweetness layered with acidity and bitterness, leaving a short, bitter aftertaste amidst the refreshing taste. It has a light yet tight, dry finish, making it a good match not only with appetizers but also with oily dishes.

Marinated salmon, aquapazza, rape blossoms with mustard, hassaku and chrysanthemum salad, shirasu and shiso leaf bruschetta, fresh spring rolls, pork ginger stir-fry, etc.
