Made with 100% Tamasakae rice from Wakayama Prefecture. This junmai sake, brewed vigorously with yeast strain 901, is diluted to around 15% alcohol and pasteurized once. It is stored in bottles in a cool place in the brewery and shipped in a fresh state. The goldfish on the shoulder label and the light blue bottle evoke a sense of coolness, making this a classic summer sake from Kurumazaka.
It has aromas of apple and muscat grapes, and on the palate, it reveals notes of citrus and herbs like dill. The taste is fresh, with a refreshing sweetness and acidity. It has a well-balanced flavor with a slight bitterness. It's crisp when served chilled, but also good warmed.
Grilled ayu (sweetfish) with salt, tempura, or marinated in sweet and sour sauce – a perfect match for river fish! Enjoy it with summer ingredients such as conger eel, hairtail, chilled tomatoes, and caponata.
