This sake is named after the warrior monks who were active during the Sengoku period, based at Negoro-ji Temple in Wakayama Prefecture. By bottling this junmai ginjo sake undiluted, its powerful aroma and flavor are fully expressed. Its crisp finish makes it an excellent sake to enjoy with meals.
This sake uses Yamada Nishiki rice for the koji and Miyama Nishiki rice for the main mash, resulting in a well-balanced flavor with just the right amount of sweetness, umami, and acidity. Aged for a year and a half in an underground cellar, it has a slightly plum-like aroma and a very smooth finish. As this is the undiluted sake, it also has a powerful flavor.
This wine pairs well with dishes that highlight the savory flavor of fish, such as seared bonito, marinated tuna, fig and prosciutto salad, and acqua pazza.
