The colour is clear, bright and pale yellow.
The aroma has a calming banana-like fruitiness, as well as a sweet almond-like aroma (raw, not roasted) (similar to almond tofu) and a faint toasty aroma reminiscent of rice straw.
When you put it in your mouth, an elegant sweetness and umami spreads, accompanied by a vivid acidity and a rich alcoholic flavor, giving it a well-structured, solid taste.
This acidity and alcohol also contribute to the crisp aftertaste, which is like a wave quickly receding from the palate.
The umami and extracts derived from the high-quality rice "Yamada Nishiki from Yoshikawa-cho, Miki City, Hyogo Prefecture" are expressed honestly, and it is interesting to compare it with "Kikuhime Yamahai Junmai Unfiltered Raw Sake."
Both "Yamao" and "Tsuruo" have a strong flavor, but the quality of that strength is different.(Though this depends on personal preference) We recommend drinking it at a temperature below 10°C.
