This rich Junmai sake is made entirely from Yamadanishiki rice from the Special A region, and is brewed using a carefully cultivated Yamahai yeast starter. "Kikuhime Yamahai Junmai" is aged after heat sterilization, and filtered before bottling, resulting in a rich, mellow aroma and flavor that is enhanced by the aging process.
"Kikuhime Yamahai Junmai Nama Genshu (Unfiltered)" is made by bottling freshly pressed "Kikuhime Yamahai Junmai" without heat sterilization or filtration. You can enjoy its youthfulness and wildness. This is a sake that you would normally only be able to taste if you came to the brewery.
