This is the first new sake! This is a pure rice sake made using 100% Gohyakumangoku rice grown in Machino, Wajima City.
The yeast used is Kanazawa yeast, but this time it was brewed with yeast collected and stored from the Wajima Monogatari mash that was being brewed at the time of the earthquake. Although the flavor is a bit hard due to the Gohyakumangoku rice yield, it has a fresh and clean taste, like new sake.
