This Junmai Ginjo is brewed with yeast harvested from mash damaged in the 2024 Noto Peninsula earthquake. The sake is squeezed under little by little pressure, and then the lees are removed and bottled. Enjoy the fresh and elegant taste that only unpasteurized sake can offer.
