This Junmai sake was brewed at Kame-no-O with support from rice farmers in Iwate Prefecture. The kimoto brewing process was carried out using half-cut barrels salvaged from a warehouse that was damaged and demolished after the earthquake. To maximize the rice's flavor, we tried polishing it to a low 88% polishing ratio. It's recommended for miso and cream-based dishes, and of course, served warm. While the flavor profile is different from Oku-Noto's Shiragiku, this is a product that we highly recommend you try.
