The colour is transparent, bright and pale yellow.
The aroma has a calming fruity scent reminiscent of banana, as well as a sweet aroma of almonds (raw, not roasted) (similar to almond tofu) and a faint toasty scent reminiscent of rice straw.
When you put it in your mouth, a refined sweetness and umami flavor spreads, accompanied by a vivid acidity and a rich alcohol content, giving it a well-structured flavor.
This acidity and alcohol also contribute to the crisp aftertaste.
The flavor and extracts derived from the high-quality rice, "Yamada Nishiki from Yoshikawa-cho, Miki City, Hyogo Prefecture," are expressed honestly, and it is interesting to compare it with "Kikuhime Yamahai Junmai Unfiltered Nama Genshu."
Both "Yamao" and "Tsuruo" have strong flavors, but the quality of that strength is different.(This depends on personal preference) We recommend drinking it at a temperature below 10°C!
The aroma and flavor characteristics of this unpasteurized sake are best enjoyed.
