After the earthquake, sake brewing resumed in Wajima.

The first batch was a Junmai Ginjo, but because it had a slightly higher acidity and felt more refreshing than the "Oku-Noto no Shiragiku Junmai Ginjo" that is normally brewed in the winter, it was decided to release it as "Noto no Natsuyasumi" taking the season into consideration.

A clean, refreshing taste. This sake is perfect for summer. It has a refreshing acidity, a sharp taste, and a light flavor without lowering the alcohol content.
